Smooth, velvety clouds of mashed potatoes are what dreams are made of. But did you know that you could get delicious, creamy mashed potatoes without adding any cream?! Yes, it’s true, read on to see how I make my deliciously dairy free mashed potatoes in the crock pot for an easy side dish to any meal.

Start off with about 2-2.5 pounds of potatoes. I use large russets because it’s easier to peel 4 large potatoes than 10 little potatoes.

Next, chop into small cubes about 1-2 inches and add to your crock pot. Cover with water and add in 1 teaspoon salt.

Set it on high and forget it for 2 hours. When you come back it should look like this:

Drain the potatoes and reserve 1/2 cup of the cooking liquid and return potatoes to the crock pot.

Next, mash the cooked potatoes with a hand masher.

Ready for my secret?

Next I add in the reserved cooking liquid, 2 egg yolks and some *ghee to make my potatoes rich, smooth and creamy. Egg yolks? Really? Yes, really. They will cook when mixed into the piping hot potatoes and they will add a richness that your family will mistake for butter and cream 😉 In fact, I have been making potatoes like this for years – and my husband just recently saw me adding in egg yolks – and he had a momentary freak out. I said well you’ve been eating it like this for nearly a decade so simmer down darling.

You can mix the eggs and ghee in by hand or use a hand mixer. Just make sure to do it quickly so that the yolks get fully incorporated. No one wants to get a big hunk of cooked egg yolk in their mashed potatoes.  Taste and season with salt and pepper to your preference and you are ready to serve these delicious clouds of mashed potatoes with just about anything your little heart desires.

What is Ghee?

Ghee is butter that has been heated and the milk solids removed from the fat, making it lactose and casein free. Generally, if you are dairy intolerant you may be able to handle ghee, if not, you can omit the ghee or substitute olive oil, or a non dairy butter alternative, such as Earth Balance, in my recipe.

Ingredients

  • 2-2.5 pounds potatoes (russet or Yukon gold)

  • 1 teaspoon Kosher salt

  • 2 egg yolks

  • 2 Tablespoons ghee, olive oil or non dairy butter alternative

  • 1/2 cup reserved potato cooking liquid

Directions

  • Slow Cooker Directions
  • Peel potatoes and cut into small cubes about 1-2 inches.
  • Add chopped potatoes to your crockpot and cover with cold water and add in 1 teaspoon Kosher salt.
  • Cover and set on high for 2 hours
  • Drain the potatoes and reserve 1/2 cup of the cooking liquid.
  • Return potatoes to the crock pot and mash with a hand masher.
  • Next add in the reserved cooking liquid, 2 egg yolks and your choice of “butter” alternative – ghee, olive oil or non dairy spread.
  • Quickly mix in these ingredients by hand or with a handheld mixer.
  • Season with salt and pepper to your preference and enjoy!
  • Stove Top Directions
  • If you prefer to cook your potatoes on the stove top, add chopped potatoes to a larger pot and cover with cold water, 1 teaspoon Kosher salt.
  • Set pot on medium high heat and bring to a boil.
  • Keep the pot at a low boil for 10-15 minutes or until you can easily pierce the cooked potatoes with a fork.
  • Drain the potatoes and reserve 1/2 cup of the cooking liquid.
  • Return potatoes to the pot and mash with a hand masher.
  • Next add in the reserved cooking liquid, 2 egg yolks and your choice of “butter” alternative – ghee, olive oil or non dairy spread.
  • Quickly mix in these ingredients by hand or with a handheld mixer.
  • Season with salt and pepper to your preference and enjoy!
