How to prep 3 pounds of chicken in less than 15 minutes

Tuesday’s Tip of the Day : Buy rotisserie chickens to use for meal prepping to save you time, energy and money.

About once a month I will go to Costco and buy 2 rotisserie chickens to use for meal prepping. If you don’t have a membership to Costco or Sam’s club you can buy rotisserie chickens at just about any supermarket. I’d suggest  that you purchase 3 if you are buying from a supermarket as they tend to be much smaller than the Costco and Sam’s clubs chickens.

Preparing the Chicken

Once I get home I make it a priority to remove the meat from the chicken right away. I do this because it is easiest to get the meat off of the bone while it is still warm. If you don’t get to it right away, it’s OK, it can absolutely be done once cold, but the chicken doesn’t shred or come away from the bone as easily.

I like to wear gloves when I do this, but the gloves are optional. I get to work and remove the skin and begin to pull off the meat in large chunks. I then place it in the lid of the container that the chicken came in. (One less dish to wash = time saving tip!)

Here we have one chicken compete and one to go. You will also notice that I try to keep the breasts as whole as I can.

I like to slice them and put the pieces into a container to add to salads throughout the week.

Once the rest of the meat has been removed you can either make stock with the bones or discard. If you choose to make stock, here’s a link to my recipe!

Next, I chop or shred the meat and place into labeled freezer bags.  Always remember to use a permanent marker to label your bags before filling; this just makes life easier. In addition to the chicken breasts, I made two 20 ounce bags (yes, I weighed them). But you could also measure with a measuring cup, whatever works for you.  I then lay the bags in the freezer until I need the chicken for a recipe. You can divide your chicken up into whatever measurements you might need.
