If you need cooked chicken for any recipe, roasting bone in, skin on breasts is the best way to get perfectly cooked, moist and flavorful chicken. During cooking the meat retains it’s moisture because it is protected by the skin. Leaving it on the bone while cooking imparts more flavor. Bonus – it is super easy!
Necessities:
2 bone in skin on chicken breasts
½ teaspoon sea salt
¼ teaspoon black pepper
1 tablespoon extra virgin olive oil
Method:
Preheat oven to 400 degrees. Line a small baking sheet with aluminum foil. Drizzle tops and bottoms of chicken breasts with olive oil and season liberally with salt and pepper. These breasts are ready to roast!
Place in preheated oven and roast for 40 minutes. Remove and allow to cool. Then remove skin and separate the meat from the bone. This chicken is perfect to eat as is, but also refrigerates well. If we are having a lighter dinner, my husband likes this on his salad. I also like to shred some of it and mix with homemade mayo to have over mixed greens for an effortless lunch the next day.
This recipe can easily be doubled or tripled. If chicken breasts are on sale, I will often make a large batch and freeze the meat in 2 cup Ziploc bags to have on hand as a protein boost for easy meals, like soups and casseroles.
