Let’s Make Blender Crepes
Crepes are easier to make than you may think. Follow my blender recipe to make perfectly smooth paper thin crepes. No need for a fancy pan, just use a large non stick skillet, a rubber spatula and butter. Add your favorite toppings – hello Nutella! Fresh fruit, whipped cream, jams, jellies and even savory fillings like ham and cheese are delicious tucked into these delicate crepes.

Ingredients
4 Tablespoon melted butter
2 large eggs
1 Tablespoon sugar
1 teaspoon pure vanilla extract
1 cup milk
1 cup All Purpose flour or substitute 1:1 ratio gluten free flour
8 teaspoons butter for cooking
Directions
- Make Crepe Batter
- Into the pitcher of your blender add: melted butter, eggs, sugar, vanilla, milk and flour.
- Secure lid and place onto the motor base.
- Blend ingredients on high for 1-2 minutes or until smooth.
- Make Crepes
- Heat a large non stick skillet over medium high heat.
- Add 1 teaspoon butter and allow to gently melt.
- Ladle 1/3 cup of crepe batter into the middle of the pan.
- Using the handle lift the pan and swirl the batter around to cover the entire base of the bottom.
- Cook gently for about 1 minute.
- Using a rubber spatula, gently lift crepe and flip over. Be careful not to rip the crepe.
- Cook for an additional minute and add toppings of your choice.
- Fold in half and in half again, to make a triangle.
- Serve immediately and enjoy!
